The Best Christmas Cookie Recipe

5 Weeks of Pumpkin Spice: Week 5

Welcome to Week 5 of my pumpkin spice series. This final week I have chosen Pumpkin French Toast Sticks, Pumpkin Pie, andHarvest Quinoa Salad.  For the breakfast dish, I made some pumpkin french toast sticks.  I love some sweet french toast in the mornings.  It’s an easy tasty breakfast and I’m excited to see how it is with pumpkin.  I made pumpkin pie for dessert.  I’ve made apple pie before, but I’ve never made pumpkin pie!  We’ll see how it turns out.  For the dinner dish, I chose a harvest quinoa salad. I love quinoa and butternut squash, so I’m excited to taste this one!

5 Weeks of Pumpkin Spice: Week 4

Welcome to Week 4 of my pumpkin spice series.  This week I have chosen Pumpkin Scones, Pumpkin Butter, and Pumpkin Chili.  For the breakfast dish, I made some pumpkin scones.  It’s supposed to be a copycat of the Starbucks pumpkin scone, so I’m assuming it’ll be great!  I made pumpkin butter for the scones and other treats to add a dash of fall in everything.  For the dinner dish, I chose a pumpkin chili.  I love chili, so I’m curious as to how it will be paired with pumpkin!

5 Weeks of Pumpkin Spice: Week 3

Welcome to Week 3 of my pumpkin spice series.  This week I have chosen Pumpkin Oatmeal Energy Bites, Pumpkin Pull Apart Loaf, and Creamy Pumpkin Soup.  For the breakfast dish, I made some pumpkin oatmeal energy bites.  I’m a big fan of the chocolate chip “cookie dough” energy bites that I have made many times, so I figured this would be a nice fall twist.  I also made a pumpkin pull apart loaf for a midday pick me up.  For the dinner dish, I chose a creamy pumpkin soup.  I’ve been on a soup kick for the past couple of days, and the pictures of this one on Pinterest were delightful!

5 Weeks of Pumpkin Spice: Week 2

Welcome to Week 2 of my pumpkin spice series. This week I have chosen Pumpkin Pie Coffee Cake, Pumpkin Pie Truffles, and Pumpkin Alfredo. For the breakfast dish, I made some pumpkin pie coffee cake. I love a good coffee cake in the morning. I also made pumpkin pie truffles for a tasty fall treats. For the dinner dish, I chose a pumpkin alfredo. Alfredo is one of my favorite pasta dishes, so I’m hoping that this lives up to its name!

5 Weeks of Pumpkin Spice: Week 1

I have decided to embrace all things pumpkin this year and what better way than to try three new pumpkin recipes each week (a breakfast, a snack or dessert, and a dinner) and let you all know how they turn out!

To start this series off, I have chosen Pumpkin Pie Smoothies, Pumpkin Spice Cookies, and Pumpkin Risotto with Goat Cheese.  I have been on such a smoothie breakfast kick lately so what better way to transition into fall.  Also, I am so thankful that the leaves are finally changing and it finally feels like fall here in West Michigan!  What better way to enjoy the weather than with a cup of tea and a yummy pumpkin spice cookie.  For the dinner dish, I chose a pumpkin risotto.  I haven’t made risotto in a while but I love the taste of it so I’m curious how it will be with this autumn spin.
