5 Weeks of Pumpkin Spice: Week 2

Welcome to Week 2 of my pumpkin spice series. This week I have chosen Pumpkin Pie Coffee Cake, Pumpkin Pie Truffles, and Pumpkin Alfredo. For the breakfast dish, I made some pumpkin pie coffee cake. I love a good coffee cake in the morning. I also made pumpkin pie truffles for a tasty fall treats. For the dinner dish, I chose a pumpkin alfredo. Alfredo is one of my favorite pasta dishes, so I’m hoping that this lives up to its name!

The first I tried was the pumpkin pie coffee cake. The flavors in this cake are perfect together. I’m excited to have some while sipping some tea in the mornings. The recipe said it’s best served cold, however the texture is a little strange. It’s a bit dense but still has some bounce to it. I might try it warmed up to see if it changes the texture. I used an 8″ square pan instead of a loaf pan, so that could have affected the way it baked. Another con of this recipe is that it makes a big mess; it required many different bowls to make it. Despite this, I would definitely try this recipe again and maybe tweak some things to see if it turns out differently because the flavor is just too good.



Next I made the pumpkin pie truffles. I highly recommend making these. They are simple to make and taste absolutely delicious. These do take time because the dough requires cooling to help form balls before coating them in chocolate. They would be the perfect treat to bring to a party. These bite size truffles are the perfect taste of fall heaven. Let me know if you decide to make them! Enjoy!!



The last dish I made was the Pumpkin Alfredo. I think that this recipe was a little bland. I loved the idea of it, and the taste was good, but not really pumpkin-y. Perhaps some salt and pepper would draw out the fall flavors. I also really liked the flavors of the pumpkin risotto from last week, so it might be worth it to add in some dried cranberries or goat cheese. What other flavors would you pair with pumpkin alfredo?
